過去在科技產業打轉，每天在高壓與無盡的客訴中承接四面八方的負能量。那時，廚房的烤箱是我唯一的避難所。隨著生活與家庭的重擔接踵而來，在幾乎要被「好員工、好先生、好兒子、好爸爸」這些角色壓得喘不過氣的時刻，我問了自己：如果只能選一件事，什麼能讓我真正感到安定？
與其在穩定的薪水裡消耗靈魂，我選擇走一條屬於自己的路。
我想做自己愛吃的東西。因為在美國生活過，念念不忘那份扎實、填滿飽滿果肉的美式蘋果派。但在台灣，這樣的味道卻極其罕見。「想吃，就自己做。」於是我一頭栽進了這個世界。為了找到心目中完美的酸脆甜平衡，試遍了市面上所有能找到的蘋果品種，把累積的標籤一張張貼成專屬的風味地圖，才最終找到黃金比例。
「派頭 phài-thâu」這個名字，就在與家人的台語對話中誕生。台語是我的母語，是我在這片土地的根。「派頭」是一個人言行舉止中的氣度、有架勢、有骨氣的樣子。買藥找藥頭；買派，就要找派頭。
曾有一對美國夫婦吃了我的派，回頭對我說：「在你身上，看得到一種知道自己在做什麼的執著。」每當在現場遇到特地來尋找這些冷門點心的客人，眼神交會的剎那，我就知道「咱是仝國的（我們是同一國的）」。我們賣的不只是點心，而是繁忙日常裡的一份安定與快樂。
清晨的比司吉、下午茶的軟餅乾，到深夜下酒的肉派——填滿日常的純粹。食派頭，予你做人有派頭。
"Phài-thâu 派頭 — Born from a Flavor Revolution"
Phài-thâu was born from an escape — from the relentless pressure of the tech industry, and a return to mother tongue, land, and flavor.
Unable to find an American-style apple pie in the market that matched the memory of one bursting with fruit, we rolled up our sleeves, tasted every apple variety available, and worked until we found the perfect balance of sweet and tart. We don't follow trends. We focus on classics rarely seen in Taiwan: generously filled apple pies, hearty Australian beef pies, classic southern biscuits, and pulled pork sandwiches.
Taiwanese is our mother tongue — the root of our culture. In Taiwanese, phài-thâu (派頭) describes a person who carries themselves with grace, backbone, and presence. A kind of quiet swagger. And by a happy coincidence, phài sounds exactly like the English word pie.
A customer once told us: "I can see in you the obsession of someone who knows exactly what they're doing." That obsession defines everything we make. As a one-person studio, we refuse to compromise on quality. What we sell is not just pastry — it's a moment of calm and a small joy in the middle of busy life.
